Waste-Free Creamy Mushrooms
Considering we are literally in the middle of Plastic Free July, I thought it only appropriate to share one of my new favourite waste-free recipes I keep whipping up. This recipe is super easy to make completely waste free. I have literally been completely obsessed with this since I accidentally stumbled across it. I guess it just randomly came about from doing my plastic-free shops and not being able to buy vegan cheese. Like most things in the supermarkets, vegan cheese is also covered in plastic.
So when I magically accidentally poured too much nutritional yeast on my mushrooms and they turned super cheesy and creamy, I was pretty happy. In fact, writing this blog post is making me hungry. I know what I’ll be having for breakfast tomorrow. High in protein, vitamins and super yummy, it’s going to be your number 1 breakfast from now on, I promise!
Make an Effort
Now I don’t know about you guys, but on some levels plastic free July is going pretty well and on others it is impossible. It really can be super infuriating when going to the supermarket. Especially when products that used to be plastic free are suddenly covered in the stuff. This just happened to the kale in my local supermarket, I was literally gutted as you can probably imagine. I live in the centre of the city with no car and no farmers markets around so I really do have to make more of an effort when shopping plastic free. So no kale for me…
I’m also on a mission to try and reduce my food waste as much as possible. Did you know that we waste 1/3 of food we buy? Food waste often ends up in landfills and is one of the biggest contributors to emitting methane gasses, which is a giant cause of global warming. I’ve recently added a new box to my fridge with a label saying “EAT ME” so that I know which food to eat first. I don’t know about you, but I definitely have a bad habit of eating new food first. It’s time for a change.
Super creamy mushrooms made waste-free.

1tsp Olive Oil
10 Button Mushrooms
2 handful Spinach
1 tbsp Balsamic Vinegar
1 clove garlic
1/4 cup Nutritional Yeast
Salt + Pepper
This makes one big portion, so double it if you’re sharing.
I also change it around a little each time. Sometimes I add spring onions, other times fried tomatoes and avocado. In fact, I will pretty much add anything that I can get out of plastic and make sure the whole of the ingredient it useable at some point in my week. Focusing on making waste-free dinners is actually really fun and satisfying.
